Exhausted. That would be my word for Wednesday. Claire was up at at 'em at 4:00 AM. Yes- 4 O'Clock in the MORNING. Mr. F was readying himself for his departure for his early Miami WODAPALOOZA flight. That left me-- well, a dish-washing, laundry folding, lunch-making, all-day working, meeting goin', chauffeur, errand-running mom for the day (and the next couple days).
After the long day, the kids and I arrived home and we were all tired and hungry. This is a bad combination for all three of us. However, this is one of the exact reasons I make the "Extra" crockpot meal on Sundays. It becomes a healthy go-to meal. Reheat and eat. Simple. Easy. Packed with nutrients. So tonight, I bring you the recipe for that night saving dish we devoured last night.
Ham and Lentils Soup
This recipe incorporates several different vegetables, sweet potatoes as well as lentils. If you haven't tried lentils, they are easily incorporated into many different dishes and often vegetarians use them to replace ground beef. They are an inexpensive source of protein, are high in fiber, and can contribute to lower blood pressure, improved blood sugar and lower cholesterol.
Triumph is no excuses. We all rise above the inconveniences and life changes. Keep that philosophy in taking care of your nutritional needs- I know that our "extra" crockpot meal certainly helped out my family last night!
